Garlic Pesto Summer Squash Tried and loved by Onehappymama
Ingredients:
1 yellow summer squash 2 lrg. Garlic cloves 1 (8 oz.) pkg. cream cheese 1 small jar of pesto 1/8 tsp salt 1/8 tsp pepper
Finely dice garlic and combine with softened cream cheese, salt and pepper. Mix well and chill for at least 30 minutes (for flavors to fuse). Slice squash into ¼ inch thick pieces. Spread cream cheese on top of squash and finish with a dab of pesto.
Get the biggest vitamin bang for your buck by steaming most of your veggies. Boiling leeches more nutrients from the food into the water than steaming does. Plus the flavor of steamed veggies is great! After steaming, toss in a little olive oil and season.
